Banana Avocado Brownies
I had never baked anything with avocados in it before this! We have fallen in love with this recipe in my household and I consider it a dessert staple. When ever I have guests over or someone stops by I warm them up a slice and they are asking for the recipe!
Let's be honest here, I love anything that can be made in one dish.... This recipe just has you throw everything in a bowl, mix and pour! I love using my kitchen aid for things like this.
Ingredients
1 large avocado
2 mashed bananas
1/2 cup maple syrup
1 tsp vanilla extract
3 large eggs
1 1/4 cup wheat flour
1/2 cup unsweetened cocoa powder
1/4 tsp sea salt
1 tsp baking soda
1/3 cup chocolate chips
Instructions
Again, mix all ingredients into mixing bowl and mix! I like to use a very ripe avocado and very ripe bananas for this recipe. If these two ingredients are very soft already then I don't even spend time mashing them. However, last time I made it the bananas weren't quite old enough and since I didn't mash them ahead of time I had chunks of banana in my brownies but that didn't bother me.
After everything is mixed then lightly oil a cast iron skillet and place mixture in it. Then place in oven at 350 degrees for about 25 minutes!
When it comes out I will check it with a toothpick. If hardly anything is on it its done! If not sometimes I may add another minute or two.
After its out of the oven I let it cool in the skillet then cut it into pieces and serve! I will package the rest in a Tupperware in the fridge and it lasts about 1 week!
