Elk Burgers

This is one of my favorite meals! I really like that you can season a bunch of meat at once, mix it up, and start cooking burgers while you work on the rest of your sides. Being that we process our own meat, we also weigh out our fat that is added and since we have such a lean ratio these burgers don't pack a lot of fat and grease. Also, I will swap elk out with venison anytime!



I love to meal prep and this is also one of my many "go-to" recipes that I always enjoy even on day 5! I will be honest, I rarely measure any of my ingredients. I just add this and add that until I think it looks right. I also, mix this with my hands.


Ingredients

  • 2 # elk burger

  • 3/4 cup bread crumbs

  • 2 eggs

  • 1/4 cup egg whites

  • 2 tsp onion powder

  • 2 tsp garlic powder

  • 1 tsp black pepper

  • 1 tsp red pepper flakes

  • 1 tbsp lawry's seasoned salt

How to:

First I add the ground elk to a mixing bowl.



Then I add all the seasonings right on top.



After that I add the eggs. If you don't have egg whites don't worry, just add another egg.



Then I add the breadcrumbs.


Once everything is in I start hand mixing it all together. Sometimes if I feel like its not holding together well I may add a little more breadcrumbs but usually it's just fine. Now I typically use my scale to to weigh out between 4-5 ounce burgers depending on what macros I am looking for that week. Today I did about 4.5 ounces. This made 8 burgers with 1 small 3.5 ounce burger for a total of 9 patties!



After I have made a few patties I start cooking them while I continue weighing and forming more patties. While they are cooking I will make sure I have veggies roasting in the oven and start preparing my carb to go along with the meal. Depending on what you like or what your macros call for you can add a slice of cheese. I love some sharp cheddar on my burger so I typically opt for it!



When everything is done I either portion it into meals for meal prep or for nights like tonight I serve up plates and then package the rest after we eat. Just like that dinner and part of my meal prep is complete!
