Protein Waffles
I got this recipe from a friend but I tend to change up a few ingredients so I figured I had to share these protein waffles with you guys! These are good reheated or toasted as well. If Austin is home I will double the batch so we have waffles to warm up with our breakfast every morning.
The ingredients are simple and easy to switch out if you don't have everything on hand. For instance, I have substituted chocolate for vanilla protein powder, egg whites for whole eggs, and added extras to customize them!
Ingredients
1 banana
1/4 cup pancake mix (I use paleo birch benders or Kodiak brand)
1 scoop vanilla or chocolate protein powder
1/3 cup egg whites or 3 eggs
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp nutmeg
optional 3/4 cup pumpkin puree
Instructions
Mix all the ingredients into a mixing bowl and mix until ingredients are blended together well. If the batter is really runny I may add a little more pancake mix. If its too thick I add a little more egg white. If I am trying to limit my added sugars I go with the Birch Benders pancake mix because it is the cleanest I have found.
When everything is mixed together I plug in my waffle maker and spray it with extra virgin olive oil and then pour mix in. This recipe makes about 4-5 waffles.
Once I have eaten my serving then I let the rest cool down and place them in a bag or Tupperware in the fridge!
I don't think it gets much easier than this!
